Ingredients

  • 3 lbs pork butt, diced and cold
  • 3/4 lb pork fat, diced and frozen
  • 1/2 bunch parsley
  • 4 cloves garlic, minced
  • 1 tsp oregano
  • 1/3 c white wine
  • 2 tbsp extra virgin olive oil
  • 3 tbsp fennel seeds
  • 2 tbsp salt
  • 1 tbsp black pepper

Mix all ingredients, progressively grind to medium. Stuff sausages in casings.
