Ingredients

  • Sauce:
  • 2-1/2 lbs ground beef
  • 1 c whole milk
  • 1 1/2 c ketchup
  • 1/8 tsps salt
  • 1 tbsp pepper
  • 1 tsp garlic powder
  • 1/2 c dehydrated onion flakes
  • 1 tsp dry mustard
  • 2 large eggs, beaten
  • 2-1/2 c quick oatmeal
  • 2 c ketchup
  • 1/2 tbsp dry mustard
  • 1/3 c brown sugar
  • 1 c water
  • 1/2 tsp salt
  • Diced Tomato Topping:
  • 1 (28 oz) can diced tomatoes
  • 1/2 c sugar

Preparation

Step 1

Meatloaf:
Mix all ingredients by hand til well blended. Let sit in refrigerator for an hour. (This step is not necessary, but the mearload holds together better when it sits for an hour or so.) Shape into 8-ounce sixed, oval shapes and place them side by side in a greased baking pan. Pour sauce(recipe follows) evenly over the meat. Bake uncovered at 325 deg. for 45 min. or til done, 155 deg-165deg. serve cooked meatload topped with a heaping tbsp. of diced tomato topping(recipe follows). Tip: buy a 40-oz bottle of ketchup.

Sauce:
Whisk together the ingredients and pour over meatloaf.

Diced tomato topping:
Simmer slowly for about 1/2 hr. You do not want it to get dry. Just cook it down a little so the sugar permeates the tomatoes.
