Ingredients
- 1 tbs butter
- 1/2 (15oz) pkg refrigerated piecrusts
- 1 (8oz) pkg fresh mushrooms, chopped
- 2 tbs port wine or apple juice
- 1 roasted red bell pepper, chopped
- 1 c half and half
- 3 large eggs
- 1/2 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 to 1/2 tsp black pepper
- 1/8 tsp ground red pepper
- 1 c chopped fresh spinach
- 1 (5oz) pkg shredded Swiss cheese

Preparation
Step 1
Unfold pie crust and place in a 9 inch pie pan. Fold edges under and crimp. Bake on lowest rack at 400* for 8 minutes. Cool.Melt butter, add mushrooms and bell pepper and saute 7-10 minutes until tender. Stir in port and cook, stirring often, until liquid is absorbed.
Whisk half and half and next 5 ingredients. Stir in mushroom mixture, spinach and cheese. Pour into crust.
Bake at 400* on lowest oven rack for 40 minutes or until set. Let stand 10 minutes.
