Basil Pesto (no garlic)

Ingredients
- 2 Cups of packed fresh basil leaves, washed thoroughly and spun dry.
- 1/2 Cup of Extra Virgin Olive Oil
- 3 TBSP of Pine nuts, toasted
- 1/4 TSP salt
- 1/4 Cup Freshly Grated (super fine) Parmesan

Step 1
Wash basil leaves and dry thoroughly in a salad spinner. Put aside.
Measure Pine Nuts into a small pan and toast over medium heat until nuts have browned slightly. Make sure to stir/flip nuts often so they don't burn! Once toasted, put aside.
In your blender, place the 2 packed cups of basil, 1/2 cup of olive oil, salt and pine nuts. Blend until all ingredients have melded.
Pour blender contents into a bowl and stir in 1/4 cup of cheese. Your pesto is now ready to be enjoyed!
