Ingredients

  • 3/4 c. unsalted butter, cut up
  • 1 1/2 c. granulated sugar
  • 1 1/4 c. unsweetened cocoa powder
  • 1/2 tsp. kosher salt
  • 1/2 tsp. pure vanilla extract
  • 3 large eggs
  • 3/4 c. all-purpose flour
  • 1 c. pecan halves
  • 3 tbsp. turbinado sugar (we used Sugar in the Raw)
  • 1 tbsp. bourbon

Step 1

Position a rack in lower third of oven and heat oven to 325°F. Line an 8-in. square baking pan with parchment paper, leaving an overhang on two sides.

In a medium saucepan, melt butter on low. Add granulated sugar, cocoa, and salt and cook, stirring, until combined, about 5 minutes.

Remove from heat and stir in vanilla, then eggs 1 at a time until fully incorporated. Fold in flour until combined. Transfer to prepared pan.

In a bowl, toss pecans with turbinado sugar and bourbon. Sprinkle over brownie batter and bake until brownies are set and toothpick inserted 2 in. from center comes out almost clean, with a few moist crumbs attached, 50 to 55 minutes. Let cool completely in pan before cutting into pieces.
