Ok... as a dedicated baker, the idea of a "microwave" anything really bothered me....but this is the easiest, quickest chocolate meringue pie you will ever make and it tastes like you stood at the oven stirring for hours. Family recipe from Cathey Evenson and Carol Henager

Ingredients

  • 3 TBSP cocoa
  • 1 1/2 cups of sugar
  • 1/3 cup of flour
  • 2 cups of milk
  • 1/2 stick of butter
  • 1 tsp vanilla
  • 3 egg yolks
  • 1/4 tsp of cream of tartar

Preparation

Step 1

Combine dry ingredients. Add 2 cups of milk. Mix with whisk. Put in microwave and cook for 3 minutes. Take out and add 3 egg yolks. Whisk and cook for 3 more minutes. Take out and add butter and vanilla. Whisk and cook for 3 more minutes. Then pour into pie shell. (total cooking time 9 minutes)

Meringue:

Beat 3 egg whites, 1/4 cup of sugar and 1/4 tsp of cream of tartar until egg whites are stiff. Add 1 tsp vanilla and spread over top of pie. Bake at 325 until brown.
