Ingredients
- 2 1/2 Pounds carrots, peeled and sliced
- 1/2 Cup olive oil
- 1/2 Cup red wine vinegar
- 1/2 Bunch fresh parsley, snipped
- 2 Cloves garlic, minced
- 2 teaspoons cumin
- 2 teaspoons paprika
- Salt and pepper to taste

Step 1
In a large pot over medium heat, cover and cook carrots in a small amount of boiling water until tender but firm,, approximately 10 minutes.
Mix all other ingredients.
Drain carrots and toss with seasonings while carrots are warm.
May be made ahead of time then reheated in an ovenproof dish at 300 degrees until hot.
