Ingredients
- 1/4 lb. (1 stick) butter, softened
- 1/2 cup sugar
- 3 eggs
- 1/2 cup orange juice
- Zest of 1 orange
- 3 cups flour
- 3 teaspoons baking powder
- ORANGE CONFECTIONERS ICING
- 2 cups confectioners sugar
- zest of 1 orange (or 1 teaspoon of orange extract)
- 1/4 cup of orange juice

Step 1
Preheat oven to 350 degrees.
In a large bowl, mix the flour and baking powder together.
In an electric mixer, cream the butter and sugar until light. Add eggs, orange juice and orange zest. Mix until well blended.
On low speed, add the flour and baking powder mixture. Mix just until blended.
Drop rounded teaspoons of the batter onto a lightly-greased cookie sheet, spacing each cookie about 2" apart.
Bake for 8-10 mins, or until lightly browned.
Remove from the oven, and let cookies cool completely before frosting. Frost with confectioners' icing (see recipe below)
ORANGE CONFECTIONERS ICING:
In an electric mixer on medium speed, mix confectioners sugar, orange zest and orange juice together until smooth.
If icing is too thin, just add a little more confectioners sugar.
