Ingredients

  • Crust:
  • 48 Chocolate wafer cookies, crushed=2 1/2 cups
  • 6 tb butter, melted
  • 2 tsp corn syrup or honey
  • Filling:
  • 2 pk (8oz each) cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 tsp vanilla
  • 2 tb coffee flavored liquor (opt)
  • 2 eggs
  • 6 oz 60% cocoa chocolate melted and cooled
  • 1/2 cup original bisquick mix
  • 3/4 cup milk
  • Topping:
  • 2 cups whipping cream
  • 2 tb powdered sugar
  • 6 oz semi sweet chocolate chips - melted and cooled slightly
  • 20-24 chocolate covered candy pieces, frozen then chopped up

Preparation

Step 1

Heat oven to 350º - put baking cups in 24 regular size muffin pans

In small bow, mix crust ingredients - divide among the muffin cups, press down firmly with fingers

In a large bowl, beat cream cheese until smooth on medium. Gradually beat in sugar until fluffy. Beat in vanilla and liquor. Beat in eggs one at a time until well blended. Pour in the cooled chocolate and beat slow until blended. Add bisquick and beat until blended. Pour in milk and beat until smooth and creamy.

Divide batter amongst all cups (cups will almost be full)

Bake 30-35 minutes until the centers are firm. Cook 15 minutes, then refrigerate in pan for 45 minutes.

In chilled small bowl, beat whipping cream on medium 30 seconds, gradually increase speed higher and beat until stiff peaks form. In last minute, add powdered sugar. Remove 3/4 cup of cream - add all but 2tb of the melted chocolate - mix until blended.

Remove from refrigerator, and take out of pan. Top each cheese cake with large dollop of chocolate cream, then smaller whip cream on that - before serving, sprinkled broken candy bars and drizzle with chocolate.
