Crispy Fried Chicken with Basil

Ingredients
- 2 boneless skinless chicken breasts
- 4 tsp tsp light coloured soy sauce
- 2 tsp Chinese rice wine or dry sherry
- 1 1/2 tsp finely grated ginger root
- 1 1/2 tsp granulated sugar
- 1 tsp five-spice powder
- 1/4 tsp ground cinnamon
- 1/2 sweet potato starch
- 1 cup loosely packed fresh thai basil
- 1/4 tsp sea salt
- 1 pinch pepper
- vegetable oil - enough for deep frying

Preparation
Step 1
1. Cut chicken into 2 x 1 inch pieces.
2. In bowl, toss together chicken, soy sauce, wine, ginger, sugar, five-spice powder and cinnamon.
3. Let marinate 10-30 minutes.
4. Press chicken into starch to coat.
5. Let stand for 10 minutes.
6. Heat 3 cups oil over medium heat until surface shimmers (275-300°).
7. Add chicken, separating pieces to prevent sticking.
8. Fry until coloured (about 3 minutes).
9. Increase heat to high.
10. Fry until golden brown and crispy(2-3 minutes).
11. Add basil.
12. Fry until crispy (about 1 minute).
13. Scoop out chicken mixture.
14. Drain well and transfer to serving dish.
15. Sprinkle with salt and pepper.
