Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup whole wheat flour
- 1/2 cup finely chopped walnuts
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 1 2/3 cups buttermilk
- 2 tablespoons butter, melted
- 1/3 cup maple syrup
- 1 tablespoon vegetable oil

Step 1
In bowl, whisk together flours, walnuts, baking powder, baking soda and salt. In small bowl, whisk together eggs, buttermilk, butter and maple syrup. Pour over flour mixture and stir just until combined.
Heat waffle iron. For each waffle, brush lightly with some of the oil; pour in generous 1/2 cup batter, spreading to edges. Close lid and cook until crisp golden and steam stops.
Can also cook as pancakes.
