Ingredients

  • 1-1/2 1-1/2 1-1/2 c SDT
  • 1/2 1/2 1/2 cup olive oil
  • 1-1/2 1-1/2 1-1/2 c onion, chopped
  • 1 1 1 sm fennel bulb, chopped
  • 1 1 1 clove garlic, minced
  • 1/2 1/2 1/2 t sugar
  • 6 6 6 oz ricotta or farmer's cheese
  • 2 2 2 lg tomatoes, peeled, seeded & diced
  • 1/2 1/2 1/2 c crumbled feta
  • 1 1 1 lb phyllo

Preparation

Step 1

Cook onion, fennel, garlic and sugar; cool. Mix cheesees and SDT w/S&P. Oil sheet pan; add two sheets phyllo brushed with oil. Roll, then coil and top w/olive oil. Bake @350 for 20-25 min.
