  • 1 # fresh asparagus
  • 4 thin slices prosciutto
  • 1 hard boiled egg. finely chopped
  • 3/4 c shredded cheddar cheese
  • prepared raspberry vinaigrette dressing
  • 1 pkg spring mix lettuce

Preparation

Step 1

Trim asparagus and boil spears for 3-6 minutes until tender-crisp. Drain and dip in ice water to stop cooking process.
Place a small handful of lettuce on salad plate. Top with slice of prosciutto and 1/4 of asparagus. top with egg and cheese. Drizzle with dressing and serve.
