SNOW PUDDING AND LEMON SAUCE 0 Picture

Ingredients

  • 1 pkg (7oz unflavored gelatin
  • 1/4 cup cold water (mix with gelatin)
  • 1-3/4 cups hot water
  • 1 cup sugar
  • 2 lemons, juiced (reserve rind of one)
  • 1/4 tsp salt
  • 2 egg whites
  • 1/2 cup whipping cream

Preparation

Step 1

Sprinkle gelatin over the top of 1/4 cup cold water. In hot water, dissolve sugar, lemon juice and rind, and salt.
Mix cold and hot mixtures. Put in refrigerator
When solid, whip egg whites u til very stiff and fold in. Then fold in whipped cream. Refrigerate.
Top with custard sauce
CUSTARD SAUCE
2 egg yolks, beaten
1 tbsp sugar
1 cup milk
Pinch of salt
Dash of vanilla
Mix egg yolks with milk in double boiler. Add salt and vanilla. Stir continually until it thickens, approximately 6-8 minutes. Remove from heat and keep stirring. Pour over pudding
