rice tarts

These tarts are very English. Unfortunately you can only get the ground rice in England. I have used rice flour but they do not taste the same. I ask anyone I know going to England to pick me up several bags of the ground rice and then I freeze it. Well worth it.

Ingredients
- 1 cup sugar
- 1 cup soft butter
- 1 cup ground rice
- 2 eggs
- 2 tsp almond extract
- pinch of salt

Preparation
Step 1
Mix together. Spoon raspberry jam in bottom of each tart shell and top with rice mixture
makes 24 - 3" tart shells
Bake 350* - 1/2 hour or until golden on top.
