Jane's Cherry and Nut Christmas Cake

Ingredients

• 1-8oz pkg. cream cheese
• 1 cup butter
• 1 1/2 cup sugar
• 1 1/2 teasp vanilla extract
• 4 eggs
• 2 1/4 cup flour
• 1 1/2 teasp baking powder
• 1 cup Maraschino cherries
• 1 1/2 cups chopped pecans or walnuts

Preparation

Step 1

Combine ingredients in order given. Spray 2- 8x4 inch loaf pans with non stick spray.
Pour in batter
Bake 325 degrees 45 mins. Take toothpick test
Cool in pans 2 mins before glazing.

Glaze:

Combine 1 1/2 cups powder sugar witrh1 1/2 Tbsp. milk and almond extract to taste..
Spread on warm cakes and garnish with cheries and chopped nuts

Double recipe for 10 small aluminum pans or 4 8x4 inch aluminum pans or
Tripple recipe for 6 large 9x5 inch pans
