Ingredients

  • Sauce:
  • 4 well-trimmed boneless pork center loin chops (4 ounces each)
  • 2 tsps cracked black peppercorns
  • 1/4 tsp salt
  • 1 Tbsps olive oil
  • 1/4 cup dry sherry
  • 1/4 cup chicken broth
  • 2 tsps Dijon mustard

Step 1

Rinse the pork chops with cool water and pat dry with paper towels. Rub some of the peppercorns and salt over both sides of the chops.

Place the oil in a large nonstick skillet and preheat over medium-high heat. Add the pork chops and cook for a couple of minutes on each side, or until nicely browned. Reduce the heat to medium-low, cover, and cook for about 8 minutes, turning the chops occasionally, until they are cooked through. Remove the chops from the skillet and set aside.
