Ingredients

  • 4 Large Portobello Mushrooms
  • 1/2 ball of Fresh Mozzarella ( I used salted and Smoked Mozzarella also works well)
  • 1 c Pasta sauce of choice (I used a roasted garlic tomato sauce by Rao’s)
  • 1 sprinkle of kosher salt (optional)
  • Fresh Basil leaves (rough cut) optional
  • 12 Grape tomatoes cut in half (optional)

Preparation

Step 1

Clean the portobello mushroom caps carefully and remove the inside “gills”. Wipe the tops of the caps gently with a paper towel to remove any dirt.
Turn the mushroom caps over so the inside is facing up and place them in a lightly greased roasting pan (drizzle of olive oil or non-stick spray)
Sprinkle with the salt
Spoon the pasta sauce evenly into the mushroom caps, top with the shredded or sliced mozzarella cheese. Top with tomatoes and basil (optional)

Bake in a 400 degree oven for 15 minutes or until the cheese is melted an bubbly. Let cool a few minutes
