  • Jimmy Dean Italian or Sage Sausage
  • Onion
  • 2 stalks of Celery
  • portabella mushrooms
  • salt & pepper
  • 1 cup dried cranberries
  • fresh parsley and sage
  • bag of stuffing mix

Step 1

Cook Jimmy Dean Italian or Sage Sausage (or use 1/2 of each). Brown and set aside-you can also cook the night before). Sauté onion and celery. Add sausage to heat up with onion and celery. Chop portabella mushrooms and add to sauté mix. Season with salt and pepper (you don’t really need much salt due to sausage). Set aside. Add dried cranberries and put in water and microwave until plump, drain. Add to onion and celery mix. Mix in fresh parsley and sage. Prepare stuffing mix according to package directions. Place everything in a glass rectangular dish and then soak it with chicken broth. Make sure that all the bread pieces are covered with chicken broth. You don’t want it soggy but you want it moist. Place the dish in the oven until heated through.
