Ingredients

  • 8 ounce cream cheese, softened
  • 1 1/2 cups shredded Swiss cheese (divided)
  • 1/2 bottle Thousand Island dressing
  • 1/2 pound deli sliced corned beef, chopped
  • 1/2 cup well strained sauerkraut
  • crackers and/or cocktail rye bread

Step 1

Preheat oven to 400°. In a small bowl, combine cream cheese, 1 cup Swiss, sauerkraut, the dressing, and corned beef. Spread in pie plate or quiche dish. Top with remaining ½ cup cheese. Bake about 15 minutes or until bubbly around edges. Serve with crackers and/or cocktail rye bread.
Note: You may also put this in the crock-pot. Turn to high for 30 minutes or low for 1 hour, then on warm.
