Ingredients

  • 3 doz. mussels
  • 2 Tbsp or more butter
  • 2 small onions, diced
  • 2 Tbsp. minced parsley
  • 1 c. dry white wine

Preparation

Step 1

Cut beard off, rinse in cold water knocking off sand. Let stand 20 min. in cold water. Drain, repeat until there is no more sand
Heat and stir, butter, onion and parsley in a lg. pot for 1-2 minutes.
Add mussels and wine. Cover and steam until mussels open. Pour off juice, slowly to leave any sand in pot. Reomve mussels to serving bowl and pur juice over and serve.
