Ingredients

  • 4 boneless skinless chicken breasts
  • 6 T butter
  • 2 T oil
  • 4 cloves garlic, minced
  • 4 T chopped shallots
  • 2 cups sliced mushrooms
  • 1 cup marsala wine
  • 1/2 cup
  • 2 T parsley
  • 1/2 t rosemary
  • 1/4 t salt

Preparation

Step 1

Flatten chicken to 1/4" and dredge in flour.

Melt butter and oil in large skillet. Saute garlic in oil quickly then add chicken. Cook chicken until browned. Remove from pan and set aside.

Add chopped shallots to the pan and cook until tender. Add mushrooms and cook until softened. Stir in Marsala, water, parsley, rosemary, and salt. Deglaze pan and return chicken to pan. Cook until both sides are glazed with sauce and the sauce is thickened.
