Ingredients

  • 1 tsp grated lime rind
  • 1/2 c fresh lime juice(about 4 limes)
  • 1/4 c evoo
  • 1 tsp brown sugar
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 - 1 tsp salt
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15.5oz) can black-eyed peas, rinsed and drained
  • 1 1/2 c whole kernel corn, frozen and thawed
  • 1/2 green bell pepper, chopped
  • 1/3 c cilantro, fresh, chopped
  • romaine lettuce
  • 2 avocados, sliced
  • Lime wedges to garnish

Preparation

Step 1

Whisk first 7 ingredients together ina large bowl. Add beans and next 4 ingredients.Toss to coat. Chill for 30 minutes.
Serve over lettuce with avocado and lime around top.
