Black Bean and Black-eyed Pea Salad

Can use only black beans or black-eyed peas.
Great served with grilled chicken or steak.

Ingredients
- 1 tsp grated lime rind
- 1/2 c fresh lime juice(about 4 limes)
- 1/4 c evoo
- 1 tsp brown sugar
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 - 1 tsp salt
- 1 (15 oz) can black beans, rinsed and drained
- 1 (15.5oz) can black-eyed peas, rinsed and drained
- 1 1/2 c whole kernel corn, frozen and thawed
- 1/2 green bell pepper, chopped
- 1/3 c cilantro, fresh, chopped
- romaine lettuce
- 2 avocados, sliced
- Lime wedges to garnish

Preparation
Step 1
Whisk first 7 ingredients together ina large bowl. Add beans and next 4 ingredients.Toss to coat. Chill for 30 minutes.
Serve over lettuce with avocado and lime around top.
