Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into small cubes
  • 2 tsp honey
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cornstarch
  • 1 tbsp oil
  • 2 cloves garlic, finely minced
  • 1 1/2 inch ginger, finely minced or 1/2 tsp finely ground ginger
  • 1/3 cup water
  • 2 tbsp fish sauce
  • 1/2 small onion, chopped
  • 3 scallions, chopped
  • Freshly ground black pepper

Step 1

Marinate the chicken in a mixture of honey, salt, pepper, and cornstarch. Set aside for 15 minutes.

Heat the oil in a frying pan until hot. Saute garlic until golden. Add marinated chicken and ginger, and stir until brown. Pour in water and fish sauce and simmer for 10 minutes. Add onions and scallions. Simmer about 5 minutes, stirring occasionally, until caramel colored.

To serve: Sprinkle with black pepper to taste and serve hot with rice.
