Vinegar Salad Dressing

Serve this dressing with any salad, but it is included here to go with the Vietnamese Chicken salad/coleslaw. It will keep for about 1 week in a tightly sealed container.

Ingredients
- 1/4 cup white vinegar
- 1/4 cup rice wine vinegar
- 1 tsp olive oil
- 1/4 cup water
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1 1/2 tbsp sugar or Splenda
- 2 garlic cloves, finely minced
- 1 small onion, red or white, thinly sliced

Step 1
In a medium bowl, beat together the white vinegar, rice wine vinegar, olive oil, water, salt, pepper, and sugar or Splenda. When the sugar is completely dissolved, pour over the garlic and thinly sliced onion and toss well.
