Lemon Poppy Seed Dressing

Can change lemon juice to prepared raspberry vinaigrette.
Great with any fruit salad.

Ingredients
- 2/3 c evoo (Can use light)
- 1/2 c sugar
- 1/3 c lemon juice
- 1 1/2 tbs poppy seed
- 1 tsp Dijon mustard
- 1/2 tsp salt
- 2 tsp finely chopped onion(optional)

Step 1
Process all ingredients until smooth. Can store in airtight container in the refrigerator up to a week. Serve at room temperature.
