  • 8 oz. cream cheese
  • 1 egg
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • Nilla wafers
  • 1 (21 oz.) can Cherry pie filling (Comestock)
  • Cupcake liners

Preparation

Step 1

Preheat oven to 350*.
Let cream cheese soften at room temperature.
Blend all ingredients (except Nilla wafers and cherry pie filling)
Place one Nilla wafer into the bottom of each cupcake liner.
Spoon cream cheese batter over the wafer, filling the cupcake liner about ¾ of the way.
Bake for 10 minutes or until the top of the cream cheese cakes are light brown.
When cooled, spoon Cherry pie filling on top of each.
