Ingredients

  • 1/4 c butter
  • 1/4 all purpose flour
  • 3 c milk
  • 1 (10oz) block of Cheddar cheese, shredded
  • 1/2 c green onions, thinly sliced
  • 1 tsp salt
  • 1/4 tsp pepper
  • 4 # potatoes, thinly sliced
  • 1 1/2 c soft bread crumbs
  • 1/4 c butter, melted
  • 1/4 c Parmesan cheese

Preparation

Step 1

Melt 1/4 c butter in large sauce pan. Whisk in flour and cook whisking continuously 2-3 minutes or until flour is lightly browned. Whisk in milk, bring to a boil, reduce heat and simmer 6 minutes or until thickened.
Stir in Cheddar and next 3 ingredients, stirring until cheese melts.
Spread 1/4 c cheese sauce in 9x13 baking dish, lightly greased. Layer half of potatoes over cheese. Top with 1/2 of remaining cheese mix.Repeat. Bake 325*, covered 1 1/2 -2 hours.
Stir together bread crumbs, melted butter, parmesan cheese.
Spread over potatoes and bake 20 minutes more or until potatoes are tender.
