Ingredients

  • icing:
  • 2 c flour
  • 2 c sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 c water
  • 1 c unsalted butter
  • 5 t unsweetened cocoa powder
  • 1/2 c buttermilk
  • 2 eggs, lightly beaten
  • 1 tsp vanilla
  • 6 t whole milk
  • 5 t unsweetened cocoa powder
  • 1/2 c unsalted butter
  • 4 c powdered sugar
  • 1 tsp vanilla
  • 1 c coarsely chopped pecans

Preparation

Step 1

1) preheat to 350, coat a 15x10x1" pan with cooking spray

2) whisk together dry ingredients in large bowl

3) in saucepan, combine water, butter and cocoa. bring to boil over medium heat, whisking. let cool slightly. pour over flour mixture and stir well. add buttermilk, eggs and vanilla stirring well

4) pour batter into prepared pan.bake 20-25 minutes, until a wooden toothpick inserted near the center comes out clean.

5) icing: combine milk and cocoa in saucepan. cook over medium -high heat, whisking till thick and pasty. remove from heat. add butter and stir till melted. whisk in powdered sugar and vanilla.

6) let cake cool 5 minutes, then spread warm icing over top. sprinkle with pecans and serve room temp or chilled
