Ingredients

  • 3/4 lb haricots verts (skinny green beans), trimmed
  • 3 large shallots, halved lengthwise and very thinly sliced
  • EVOO, for drizzling
  • 3 Tbsp fresh thyme, chopped
  • salt and pepper

Preparation

Step 1

Position a rack in the center of the oven and heat to 450F. Line a rimmed baking sheet with aluminum foil, matte side up. In a large bowl, toss the green beans and sliced shallots with EVOO to lightly coat. Season the green beans with the chopped thyme and salt and pepper, toss again. Roast until the green beans are crispy and browned in spots, about 15 min. Toss with tongs and serve.
