Ingredients
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 2 TBS minced red onion
- 2 TBS minced cilantro
- Cayenne pepper to taste
- Kosher salt to taste

Preparation
Step 1
Mix all ingredients together. Let sit 5 minutes before serving to allow flavors to blend. To serve, split arepas and fill with queso mixture.
Makes enough to fill 6 arepas.
