Pressure Cooker Caldo Verde - Portugese Sausage, Kale and Potato Soup 0 Picture

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 pound Spanish chorizo or Kielbasa, cut into 1/4th inch slices
  • 1 large onion, peeled and chopped
  • 4 cloves garlic, minced (or more, if you like)
  • 2 large russet potatoes (about 1 pound) , peeled and cut in 2 inch chunks
  • 1 pound baby dutch potatoes
  • 16 ounces kale, stemmed and chopped, about 6 cups
  • 6 cups chicken broth or stock
  • 1 16 ounce can kidney or cannellini beans, drained and rinsed
  • 1 14 ounce can diced tomatoes
  • 1 tablespoon balsamic vinegar
  • 1 ounce parmesan rind (optional)
  • salt and pepper to taste

Preparation

Step 1

Set the cooker to HIGH or BROWN, until sizzling. Add olive oil.
Add the sausage and brown for a few minutes. Add the onion and sauté 2 minutes longer or until until the sausage is browned and onion is translucent. Add the garlic and saute for 1 minute.
Add potatoes, kale, chicken stock, beans, balsamic vinegar and tomatoes and parmesan rind, if using..
Salt and pepper to taste.
Securely lock the pressure cooker’s lid and set for 5 minutes on HIGH. Let slow release for 5 minutes then quick release.
