Ingredients

  • 1/4 cup chopped sun-dried tomatoes
  • 2 tsp. olive oil (reduce if tomatoes were in oil)
  • 2 cloves garlic minced
  • 1 Tbsp. balsamic vinegar
  • 1 tsp. dried basil
  • 1/3 chopped parsley
  • pinch whit pepper
  • 250 grams Brie

Preparation

Step 1

in a small skillet, heat oil over medium heat, cook tomatoes and garlic, do not brown the garlic, add vinegar and basil cook about 2-3 min. remove from heat, stir in parsley and pepper, let cool
Cut rind off the brie. Place brie in fondue pot and top with tomatoe mixture
cook until cheese softens, serve with baguette slices
If baking use small glass dish and bake until cheese melts
If using BBQ, place bries on a large double thick square of tin foil. shape foil loosely around brie, place on rack on high heat, close lid until melted about 10 minutes
