Ingredients

  • 1 lb butternut squash, cubed
  • 1 medium baking apple, peeled, cored and cubed
  • 3 tbsp butter, melted
  • 3 tbsp honey
  • 1/4 cup pecans, finely chopped
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon

Preparation

Step 1

Preheat oven to 400 F. Place cubed squash and apple in an 8-by-8-inch baking dish. Add 2 tbsp water and roast uncovered, stirring occasionally for 20 minutes, or until almost cooked through. Meanwhile, in a small bowl, combine next five ingredients. Remove squash from oven, and pour honey mix over squash. Stir lightly to coat. Return to the oven for another 10 minutes, or until cooked through. Remove from oven and serve.

To steam: In a large pot bring water to boil over high heat with a steaming rack in place. Place 2 cups of butternut squash into steamer rack, cover with a lid then steam for 6 to 8 minutes. Remove from heat.

To microwave: Place 2 cups of butternut squash in a microwave safe dish. Add 2 tbsp of water. Cover and microwave on high for 5 to 7 minutes.*
