Chicken Roulade

Ingredients
- 6 boneless skinless chicken breast
- 1 1/2 cup chopped spinach
- 1 cup shredded (low fat) parmesan
- 4 tbsp. lemon juice
- 2 tbsp. lemon pepper
- 1/2 cup bread crumbs
- 1 tbsp. corn starch
- olive oil
- salt & pepper to taste

Preparation
Step 1
Pre-Heat oven to 400 degrees.
Place chicken in between plastic wrap and pound to 1/4 inch thickness.
Mix spanish, parmesan cheese, lemon juice, salt and pepper to taste in a bowl.
Place chicken breast on a flat surface. Add mixture to one end of chicken breast and roll onto a large cigar (do not smoke). Place in baking dish.
Add lemon pepper to bread crumbs and sprinkle over the top of chicken breast. Spray the tops of chicken breast with olive oil spray, (this will help the crust to brown, and get nice and crusty). Pour lemon flavored cooking wine around baking dish.
Bake at 400 degrees for 30 minutes. Once chicken is cooked, place on serving platter.
Pour liquid from the baking dish into a sauce pan. Mix corn starch with 1/2 cup warm water and stir well. Pour into sauce pan till it thickens. Pour over the chicken breast.
