  • Filling:
  • 1 cup frozen raspberries
  • 1 cup chopped fresh peaches
  • 1/4 cup sugar
  • 1 tbsp cornstarch
  • 1/2 tbsp lemon juice
  • Topping:
  • 1/3 cup flour
  • 2 tbsp sugar
  • 1/2 tsp baking powder
  • Pinch of salt
  • 1 tbsp butter, melted
  • 2 tbsp buttermilk, or whatever you have on hand, such as milk, sour cream, or yogurt

Step 1

Preheat oven to 350 F. Toss filling ingredients to combine and pour into a microwave-safe dish. Microwave for 2 to 4 minutes, until bubbly. Place hot filling in a small oven-safe dish, such as a ramekin.

For topping, combine flour, sugar, baking powder and salt in a small bowl. Stir in melted butter and buttermilk until blended. Drop spoonfuls of dough onto hot fruit filling. Bake, uncovered, for 30 minutes, or until topping is done.
