Ingredients
- !(15oz)can black beans,rinsed and drained
- 1 (10oz) can diced tomatoes with green chiles (DelMonte)
- 1 can whole kernel corn(DelMonte)
- 3/4 c water
- 1 med jalapeno pepper, seeded and chopped
- 1 tsp salt
- 1 c uncooked instant white or brown rice
- 1 bunch green onions, chopped
- 1/3 c cilantro, fresh,chopped

Preparation
Step 1
In a skillet, combine beans,tomatoes,corn, water,pepper, and salt. Bring to a boil, stir in rice. Cover and remove from heat. Let stand for 5 minutes or un til liquid is absorbed. Sprinkle with onion.
