Ingredients

  • 1 LB spaghetti or linguine
  • 1 TBL salt
  • 3 TBL toasted sesame oil
  • 3/4 C chunky peanut butter
  • 6 TBL soy sauce
  • 3 TBL white vinegar
  • 1 TBL hot sauce (mild)
  • 1 cucumber, peeled, quartered lengthwise, seeded & sliced thin
  • 1 red bell pepper, seeded & cut into 1/4" strips
  • 1/3 C chopped fresh cilantro

Preparation

Step 1

cook pasta - al dente
reserve 3/4 C cooking water
drain pasta & rinse w/ cold water until cool
add sesame oil & toss to coat

dress & toss:
whisk peanut butter,, soy sauce, vinegar, ginger, hot sauce & 6 TBL pasta cooking water in med bowl until smooth

add dressing, cucumber, bell pepper & cilantro to pasta & toss to combine, adding reserved pasta water as needed to adjust consistency
serve

MAKE AHEAD: oil-coated pasta, dressing & vegies can be refrigerated in separate airtight container for 2 days
bring ingredients to room temp before tossing together
add warm water to thin as needed
