Ingredients
- 1 med onion, chopped
- 2 tbs evoo
- 1 (19oz) can enchilada sauce
- 1 (14 1/2 oz) can diced tomatoes with jalapenos (Del Monte)
- 1 (16oz) can black beans, rinsed and drained
- 1 (11oz) can Mexican style corn, drained
- 1 tsp fajita seasoning or chili powder
- 1 tsp ground cumin
- 1 (10oz) pkg 6 inch corn tortillas
- 3 c chicken, chopped, cooked
- 3 c (12oz) Mexican four cheese blend, shredded

Preparation
Step 1
Saute onion in evoo.
Stir in next 6 ingredients and simmer 5 minutes.
Spoon 1/3 of mixture into lightly greased 9x12 baking dish. Layer with 1/3 of tortillas, Half of chicken, and 1 cup cheese. Repeat layers. Top with tortillas, sauce and 1 c cheese. Bake 350* for 15-20 minutes or until bubbly.
