Ingredients
- 2 T EVOO
- 8 c turkey stock (divided)
- 1 lg onion, thinly sliced
- 3 cloves garlic, sliced
- 3 bay leaves
- 2 t crushed red pepper
- 2 t dried thyme leaves
- 6 lbs collard, kale, and turnip greens, cleaned and chopped
- 1/2 lb smoked turkey, diced

Preparation
Step 1
1. In a lg heavy pot, heat the EVOO & a small amt of the stock.
2. Saute the onion & garlic until softened, about 5 minutes.
3. Add remaining stock, bay leaves, red pepper, and thyme and simmer 12 minutes.
4. Add the greens & smoked turkey & simmer uncovered until the greens are tender.
5. Season w/salt & pepper to taste, and serve.
