Ingredients
- (Makes about 24)
- 4 eggs, divided
- 1 cup sugar, plus 2 tablespoons
- 1 cup Nutella, divided
- 1 cup unsalted pistachios, shelled
- 1/3 cup dried cherries
- 2-3/4 cups flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/4 cup confectioners' sugar
- 3 tablespoons hot water

Step 1
Preheat oven to 350-degrees F.
In a large bowl, beat together 3 eggs, 1 egg yolk, and 1 cup of sugar.
Add 3/4 cup Nutella. Stir to combine well.
Stir in pistachios and cherries. Stir in flour, salt, and baking powder.
Divide dough in half and form into 2 logs, about 10 x 3-inches.
Place logs several inches apart on baking sheet.
Brush logs with remaining egg white and sprinkle with 2 tablespoons sugar.
Bake 25 minutes.
Remove baking sheet from oven and let cool for 10 minutes.
Turn oven down to 300-degrees F.
Transfer logs to a cutting board and cut on a light diagonal into 1/2-inch slices.
Place back on baking sheet. Bake 15-20 minutes, turning once during that time.
Cool completely.
In a small bowl, whisk together the remaining Nutella, confectioners' sugar, and hot water.
Dip one end of each biscotti in glaze and place on waxed paper, foil, or parchment to cool.
Dry at room temperature for about 1 hour. Store in container for up to 2 weeks.
