Loaded Potatoe & Kale Soup

Ingredients
- 3 tbsp butter
- 4 cloves garlic
- 3 leeks, white and light green parts chopped
- 1 onion, chopped
- 3/4 tsp salt
- 1/2 tsp pepper
- 1 potatoe and cut into chunks
- 1 900 ml chicken broth
- 8 cups chopped kale
- 2/3 cup shredded old cheddar

Preparation
Step 1
1. In a large saucepan melt butter. Cook garlic, leeks, onion, salt & pepper stirring occasionally until softened. Stir in potatoe and 1/2 cup water.
2. Add broth, bring to boil. Reduce heat to medium low and simmer till potatoe is tender, about 8 minutes
3. Using immersion blender, blend soup until smooth.
4. Return to pot and stir in kale and cook until softened, about 4 minutes
5. Top with Cheddar to serve
