Tortilla Casserole

Ingredients
- 1 # beef, sirloin cut into thin strips
- 6 tbs lime juice
- 1/2 tsp ancho chile pepper
- 1/4 tsp salt1 large red onion,1/2inch slices
- 2 ears fresh corn(or 1 can Del Monte whole kernel fresh cut corn, drained)
- 2 tbs evoo
- 1 (15oz) can black beans, washed and drained
- 1 (15 oz) can kidney beans, drained
- 2 seeded jalapeno peppers, chopped
- 1 tsp chipotle pepper, chopped
- 1/4 c low sodium chicken broth
- 1/2 tsp lime zest
- 6 corn tortillas2 c Monterey Jack cheese, shredded
- 4 tomatoes, sliced
- 1 1/2 tsp oregano, chopped

Preparation
Step 1
Marinate steak with 2 tbs lime juice,ancho powder,and salt for 30 minutes. Cook or grill(if grilling, cook and then slice).
Toss the onion and corn in evoo.
Add beans, peppers,chicken broth, remaining lime juice,and lime zest.
Add steak.
Place 2 totillas in a 9x13 baking dish. Sprinkle with 3/4 c cheese.
Layer with steak mixture, 1/3 of the tomato slices, 1/2 tsp oregano. Repeat layers twice again. Cover with aluminum foil and bake 20 minutes at 400*. Uncover and bake 10 more minutes. Serve immediately with sour cream or sour cream dips.
