Ingredients

  • 1.5 c all purpose flour
  • 1 c quick cooking rolled oats
  • 3/4 c packed brown sugar
  • 1/2 c finely chopped pecans or walnuts
  • 1 t finely shredded lemon peel
  • 1/4 t baking soda
  • 1/2 c applesauce
  • 1/4 c light olove oil
  • 1.25 c cherry preserves

Preparation

Step 1

1. Preheat oven to 350F. Line a 9x9x2" baking pan w/foil, extending the foil over the edges of the pan; set aside.

2. In a lg bowl, stir together flour, oats, brown sugar, pecans, lemon peel, and baking soda. Stir in applesauce and oil; mix well. If necessary, knead by hand to combine. Measure 1c of oat mixture; set aside. Press the remaining oat mixture into the bottom of the prepared baking pan. Bake for 20 minutes.

3. Carefully spread the preserves evenly over the hot crust. Sprinkle with the reserved oat mixture; pat gently into preserves. Bake about 30 minutes more or until top is lightly browned. Cool in pan on a wire rack. Using the edges of the foil, lift the uncut bars out of the pan. Cut into bars.
