Ingredients

  • 3 Tbsp. creamy peanut butter
  • 2 Tbsp. brown sugar or honey
  • 2 Tbsp. low sodium soy sauce
  • 1 1/2 Tbsp. toasted sesame oil
  • Zest and juice of 1 lime
  • 1 tsp. Sriracha or chili garlic sauce
  • 1 tsp. fresh ginger, peeled and minced
  • Splash hot water
  • 2 medium kohlrabi, peeled and thinly sliced
  • 3 medium carrots, peeled and thinly sliced
  • 3 green onions, thinly sliced

Directions
Whisk together peanut butter, brown sugar, soy sauce, sesame oil, lime zest and juice, Sriracha and ginger. If thick, add a splash of hot water and stir.

In a large bowl, combine kohlrabi, carrots and green onion. Toss with peanut sauce.
