This is a great recipe that you can do many things with:
1. Serve as is only on flour tortillas.
2. Serve over chips corn chips or tortilla chips.
3. Make tostados adding refried beans on the bottom
Add ins: red or yellow bell pepper and onion when cooking beef.
Add in corn and black beans, avocado, sour cream or salsa to any of the suggestions above.
This would be a great camping dis to make the beef and rice mix then place the additional ingredients in baggies and your ready to go. Dinner in a bag

Ingredients

  • Nonstick cooking spray
  • 1 pound lean ground beef
  • 1 (1.25 ounce) package taco seasoning mix
  • 2 cups water
  • 2 cups Minute® White Rice, uncooked
  • 1 cup shredded cheddar cheese
  • 2 cups shredded lettuce
  • 1 large tomato, chopped

Preparation

Step 1

Spray large nonstick skillet with nonstick cooking spray. Add meat and brown over medium-high heat; drain off excess fat.

Add seasoning mix and water; stir. Bring to boil.

Stir in rice. Sprinkle with cheese; cover. Reduce heat to low; simmer 5 minutes. Top with lettuce and tomato just before serving.
