  • 1 cup flour
  • 6 tbsp sugar
  • 2 tsp baking powder
  • 3/4 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup peanut butter
  • 2 large eggs
  • 2/3 cup low-fat milk
  • 4 tbsp unsalted butter, melted
  • 1 cup chocolate chips

Step 1

Whisk dry ingredients together. Using a rubber spatula, beat in the peanut butter until it's soft, then stir in the eggs, milk, and butter. Mix in the chocolate chips. Lightly oil a skillet and preheat it over medium heat. For each pancake, drop 1/3 cup batter onto the skillet. Pat into rounds and cook until bottoms are golden; flip and cook other side. Let cool; serve with ice cream and hot fudge.
