Ingredients

  • 1 package trofie pasta Can par cook 16 to 17 minutes. total time is 22 minutes
  • 2 cups of Michael Anthony's pesto (*see recipe below)
  • 2 cups of potatoes, small dice use Idaho or baby tomatoes.
  • 1/2 lb green beans, trimmed
  • 1/2 cup extra virgin olive oil
  • 1/2 cup toasted pine nuts (*see recipe below)
  • Parmigiano
  • Salt
  • Michael Anthony's Pesto
  • 2 bunches of flat Italian parsley
  • 2 bunches of fresh basil
  • 4-6 garlic cloves
  • 1/2 cup grated Parmigiano (optional)
  • In a blender or food processor, add pine nuts and garlic followed by 2 cups of . extra virgin olive oil. Then add parsley, basil, salt and pepper. Place lid on top and blend on medium to high speed slowly adding remaining 2 cups of olive oil.
  • When completely blended, add cheese if desired. Refrigerate - will hold up to two
  • weeks.
  • Tomato basil pesto use Roma tomatoes, basil, almonds, cheese and EVOO Grnish with tomatoes seeds and skin removed chopped.

Preparation

Step 1

In a large pot of salted boiling water, cook potatoes until al dente
(about 5 minutes). Remove, place on a plate and reserve.
Add green beans to the same bOiling water and boil for about 2
minutes. Remove the green beans and put in an ice bath. After
green beans are chilled, strain, dry and reserve.
In another large pot of salted boiling water, add pasta and cook
according to the package directions. Save cup of pasta water. During the last 2 minutes of
cooking time, add the green beans and potatoes. Drain and reserve
the pasta and vegetables.
In a large saute pan, heat olive oil over low heat. Add the pasta and
vegetables. Add the pesto and toss until pasta is thoroughly coated
with the sauce. if necessary loosen sauce with pasta water. Sprinkle with Parmigiano and serve. Garnish each portion with toasted pine nuts. drizzle with EVOO and add additonoal cheese
*Toasted Pine Nuts
In a small saute pan, toss
pine nuts over medium heat
for about 5 minutes until
golden brown
