Ingredients

  • Cake:
  • 1 Cup flour
  • 1 Tsp baking soda
  • 1 Tsp ground cinnamon
  • 1 Cup sugar
  • 3 eggs
  • 2/3 Cup canned pumpkin
  • Filling:
  • 4 Tbsp melted butter
  • 1 Tsp vanilla
  • 1 Cup confectioners (10x) sugar
  • 8 Oz cream cheese,softened

Preparation

Step 1

1)Preheat oven to 350 degrees

2)Sift together the flour,baking soda and cinnamon. Mix in sugar,eggs and canned pumpkin.

3)Pour mixture onto a greased cookie sheet and bake for 15-20 minutes. Remove from oven and let cool in pan for 5 minutes. Sprinkle one side with confectioners (10x) sugar.

4)Flip cake onto waxed paper (sugar side down)and sprinkle with confectioners (10x) sugar on other side. Roll cake with waxed paper into jelly roll form. Cool completely.

5)Blend melted butter,vanilla,confectioners (10x) sugar and cream cheese with an electric mixer until smooth.

6)Unroll cooled cake with waxed paper on bottom. spread filling onto cake and re-roll without the waxed paper. Cover with plastic wrap and refrigerate until firm. Slice and serve.
