Ingredients

  • 5 lbs. potatoes
  • 1/2 + lb. of bacon
  • 1 fair size onion
  • salt and pepper to taste
  • 1/4 to 1/3 cup vinegar
  • 1 Tbsp. sugar

Preparation

Step 1

Peel and boil potatoes.

In large frying pan, fry at least 1/2 lb. bacon, cut in small pieces. When crispy add 1 good size onion, cut into small pieces. Cook till onion is transparent. DO NOT DRAIN.
Cut potatoes into small slices. Place in oven proof bowl.

When onions are done,add about 1 tbsp. sugar, salt and pepper and vinegar to bacon and onion mixture. Stir and add to potatoes. If you need more liquid add a little water or more vinegar.

Make ahead and keep in a warm oven . Taste and add more vinegar to taste.
